I have done the impossible. I made a dinner for my four kids, and two adults, and there was not one complaint. I even got compliments – from the kids! I don’t think this has ever happened. Between my sister’s kids and mine, there is always something that at least one of them does not care for, (or feels the need to pretend they do not like) every time we get together – which is at least once a week. It is just expected, which is why this was such a shock for us. This was the first time I used my Instant Pot, so even though I knew what to expect from other people’s raves about these, I’m very impressed. I will post the recipe below.
I was really unsure about this one, even though it is literally called “Crack Chicken.” My sister was too. So when it was time for dinner, we scooped some out on to each kids’ plate and then kind of stood around the kitchen, pretending to look at random counter items, watching out of the corner of our eyes to see what the kids thought of the chicken before trying it ourselves. One of the perks of having kids, I guess. To my amazement, ALL FOUR of them loved it! We even got “mmm…” sounds out of them! Oh, and it is only a few minutes of prep and 15 min of pressure cooking, and it’s done. Sounds too good to be true, but it’s not and you need to try it.
Recipe for Crack Chicken that kids actually eat:
*Note – I cut this recipe in half and it fed 4 kids, two adults, and had a lot of left over chicken! You can also add broccoli, and if you know what you are doing, rice (although some reviews on this additive say that the rice scorched to the bottom, so best of luck, as no one posted a solution to that!)
Ingredients:
6-8 Slices of bacon (I substituted Turkey Bacon and it was DELICIOUS!!)
2 LBS Boneless Chicken Breast
1 packet of ranch seasoning (seasoning powder, not dressing)
8oz Cream cheese
1/2 Cup of water
1 Cup of cheddar cheese
Directions:
Place chicken breasts and cream cheese in the Instant Pot (you don’t need to mix it at all, literally lay the chicken breasts in there and place the heap of cream cheese where ever on top, it will spread itself and mix in as it cooks)
Pour the packet of Ranch seasoning over top (again, no need to mix, just toss it in)
Add the half cup of water
Place the Instant Pot on Manual High pressure for 15 minutes; when it is done, do a quick release
Open the pot when safe; remove the chicken and shred it (I just used two forks), replace the chicken back into the pot, which should now be sent to low (or warm)
Add the cheddar cheese; stir
Add the bacon (or Turkey bacon)
Serve and get addicted.
This would literally take 6 hours in a slow cooker. If you do not have an Instant Pot, consider one. AMAZING. Leave comments if you end up trying the recipe and let me know if your family enjoyed it too!
