They’re called “Grinch” cookies because they are green! This recipe will yield about 3 dozen soft, chewy and delicious cookies. I found this recipe on the internet and tried it myself – find the instructions with my own little tweaks/tips here:
What you’ll need:
For the first mixing bowl:
- 1 & 2/3 cups of sugar
- 1 cup of (room temperature!) unsalted butter *softened*
- 2 eggs
- 2 tsp vanilla extract
- Green food coloring (optional)
Dry ingredients – second mixing bowl:
- 3 & 1/3 cups of all purpose flour
- 2 tsp corn starch
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- Approx 1 cup of red & green M&Ms (I grabbed a huge bag from Amazon)
Making the cookies
First mixing bowl:
- Use an electric beater to mix the sugar and very soft butter together well (1-2 minutes)
- Add eggs, beating the mixture after adding each one
- Stir in the vanilla extract and food coloring – add as many drops as you need to get the desired shade of green you want
Second mixing bowl:
- Mix together the rest of the ingredients (except the M&Ms)
Cookie magic:
- Mix all of the ingredients together with the electric beater on low; fold in the M&Ms
- Cover your cookie dough with plastic wrap and put it into the fridge for 30 minutes (this is to make sure the cookies don’t go into the oven too warm/spread too thin)
- Set your oven to 350 F
- Line your cookie sheet with parchment paper
- Once the dough has cooled, roll the dough into balls and place them onto your cookie sheet, well spaced (no more than 12 to a tray)
- Bake for 11-13 minutes
- Allow the cookies to cool completely before taking them off of the tray
- Enjoy!
Optional: press additional M&Ms onto the cookies when they are fresh out of the oven & still warm.
