Happy birthday to my beautiful sister! Her and her kids joined us for dinner this evening, and I decided to use an old recipe from my Aunt for homemade ice cream cake for our desert. Total cost was under $10, and filled up 7 of us, with about 1/3 of the cake left over (for now!)
So simple to make, and takes just over 5 minutes:
- Line a pan with a layer of ice cream sandwiches (a pack of 12 is usually less than $5)
- Make instant vanilla pudding (one package is around $1.25), you just need to add milk
- Mix the vanilla pudding with whipped cream (ratio of 1:1) and pour over the layer of ice cream sandwiches
Serve right away, cool, or freeze! So good, and so easy to make. The only hard part is telling the kids that they cannot have thirds right before bed …and trying to get my nephew to keep his shirt on. That was a no-go.
