This recipe is near and dear to the Edmonton Mama family. I remember making it with my grandmother when I was a little girl. It is her recipe. And while she’s no longer with us, I often make this with my own kids to keep her memory alive. I thought I’d share it with all of you because it’s absolutely delicious!
Ingredients
- 1/4 cup margarine (at room temperature)
- 1 cup of brown sugar
- 1 egg (at room temperature)
- 4 ripe bananas (mashed well)
- 1 1/2 cups all purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- Splash of vanilla extract
Directions
- Cream margarine with a stand or hand held mixer
- Add in brown sugar and mix well until it is fully incorporated
- Add in egg, vanilla and mashed bananas. Mix.
- Mix in all dry ingredients until just combined
- Bake at 350 for 1 hour (I put tinfoil over the pan for the first 30 minutes to avoid the top getting too brown, then I remove it for the remaining 30 minutes of baking time)
If you want to make banana bread bites, use a mini muffin tin! Fill 3/4 of the way full and bake for 12 minutes. This recipe will make 45 banana bread bites!
